Chianti Classico DOCG Pèppoli
Ruby red in color, the nose Pèppoli 2011 is characterized by notes of cherry well blended with hints of chocolate and vanilla, made from aging in wood. In the mouth the wine has the characteristics of Sangiovese. The tannins are soft and silky, good is persistence aftertaste.
The varieties are vinified separately to get the best from each. Sangiovese has macerated in stainless steel tanks for about 10 days. Merlot and Syrah are also vinified separately to get wines with soft tannins and preserve the fruity, by controlling the temperature of fermentation. The malolactic fermentation took place before winter for all three varieties. Earlier in the year the wine was blended and introduced in timber for about 9 months. The aging was conducted in oak casks and 10% in American oak barrels. The aging in large barrels used to preserve the fruity aromas resulting from fermentation and makes the sweeter tannins, the American oak barrels make the olfactory nuances that complement the aromatic range of Pèppoli. At the end of refinement followed bottling. The Pèppoli rests in the bottle for a few months before release.
Rosso Toscana IGT Villa Antinori
Deep ruby color. Intense and complex bouquet reminiscent of ripe plum, boxwood and hazelnuts in particular. In the mouth the wine has a good body, round with soft and velvety tannins, long and tasty.
The grapes were de-stemmed and softly pressed and put in special temperature controlled tanks. The fermentation is started the day after crushing and lasted from 5 to 7 days; maceration, instead, lasted from 8 to 12 days. The fermentation temperature did not exceed 28 ° C for the Cabernet and Sangiovese, thus promoting the extraction of color and tannins. In the case of Syrah and Merlot they have never exceeded 25 ° C to preserve the aromatic substances. The wine has undergone malolactic fermentation in the months of October and November, after which it was introduced in French oak barrels, American and Hungarian for an aging period of 12 months. The wine was then bottled and aged for 8 months in bottle.
Chianti Classico Riserva DOCG Tenuta Tignanello
The Marchese Antinori is produced only in the best vintages, exclusively from grapes from the vineyards of Tenuta Tignanello, in the Mercatale Val di Pesa in the Chianti Classico.
Very intense ruby red color with purple hues, the nose Marchese Antinori 2011 shows great maturity, with notes of red fruit, such as cherry, raspberry and cassis, licorice, chocolate and vanilla. On the palate the sweetness and firmness of the tannins make it available, despite his youth. The persistent aftertaste is long and extremely pleasant.
The particular climatic conditions imposed, from the time of collection, a careful selection of grapes and berries; the grapes were in fact gently de-stemmed and the grapes are carefully selected on sorting tables in order to preserve to the maximum the typical components of perfumes and so important in the Sangiovese, but also in Cabernet Sauvignon. Once in stainless steel tanks, the fermentation shall be operative in about a week, after which the wines are left to macerate with the skins for a further 9-10 days. After the racking, the wines were immediately placed in oak barrels for the most part from France to meet the malolactic fermentation, which shall be operative spontaneously by the end of the year. After racking, the wine, still separated by the origins of the vineyard, have addressed the period of aging in French oak barrels and Hungarian for a period of about a year. The wine was then bottled and then continued to mature in the bottle for another 12 months.
